材料
白菜300 克
薑數片
蔥1支
蝦米 5 克
香菇 4 朵
米酒 1 大匙
白胡椒少許
鹽少許
沙拉油 1 大匙
麻油 1大匙
作法
1. 蝦米香菇用水泡發備用。
2. 薑與香菇切絲,白菜切段備用。
3. 熱鍋加入沙拉油與麻油,爆香薑絲與香菇。
4. 放入白菜拌炒,加入鹽與胡椒調味。
5. 加入泡香菇與蝦米的水蓋上鍋蓋10秒讓菜葉軟化。
6. 將水分收乾,炒入蔥加入香油增香即可起鍋。
備註
這幾年在台灣,台菜當道。很多傳統的台菜被端到宴會桌上,其中白菜滷或者是宜蘭的西滷肉可算是其中的經典。在台灣入冬之後寒流侵襲,白菜味道更加清甜。除卻傳統常用的豬肉、紅蔥酥、蹄筋、蛋酥,開陽白菜,算是這些經典菜式的簡易版。在寒冷的冬季這些帶有湯汁的燉菜,不但方便更可以為出外的遊子祛寒。在加上,燉菜本身可以再加熱的特性,開陽白菜就成為了我餐桌上的最愛。
在蒙城一個人生活,買什麼蔬菜就成為必須要考量的重點了。畢竟一個人的消耗速度有限,而葉菜類一般不容易久放。在加上這裡的冬季很長,生長季短很多蔬菜都仰賴進口或冷凍。白菜在入冬前當令,又適合存放,和高麗菜一樣價格在冬季是相對的便宜。白菜就成為了我冰箱中常備的蔬菜。
Dried shrimp braised Napa cabbage
Ingredients
300 g of Napa cabbage
A few slices of ginger
One green onion
5 g of dried shrimps
Four shitaki mushrooms
One table spoon of sake
A pinch of pepper
A pinch of salt
One table spoon of canola oil
One table spoon of sesame oil
Instructions
- 1. Soak the dried shimp and the shitaki mushroom in water until it is rehydrated.
- 2. Shred the ginger and the mushroom. Cut the Napa cabbage and the green onion into palatable pieces.
- 3. Heat up the pan with canola and sesame oil and brown the ginger and mushroom in order.
- 4. Add in the cabbage and season it with salt and pepper
- 5. Add in the water that you used to soak the mushroom and shrimp. Put on the lid of the pan for around ten seconds and wait for the cabbage to wilt.
- 6. Wait until the sauce are thicken and add in the green onion and it is ready to serve.
Notes
In these year the family style Taiwanese dishes have been more and more popular. Traditionally you can add in pork, fried eggs, pig tender, or fried red onion. This is a poor man version or more family style of those dishes. In Taiwan, winter time makes the Napa cabbage taste sweater. It was commonly used in soup or stews to comfort us in the cold winter.
Living alone in Montreal, what kind of vegetable should I buy seems to be a big question for me. Due to the long winter with two meters of snow outside, most of the leafy vegetables are extremely expensive. Most leafy vegetable can’t last very long in the fridge. Since I live alone I can’t buy anything that won’t last in the fridge. The cheap and long lasting Napa cabbage become my favorite on my grocery list.
